Uformel is the relaxed younger sibling of the Michelin-starred formel B, opened in 2014 as a reaction against the formality of fine-dining restaurants. Its food shares formel B's core approach of pure, deep flavours and tight, rigorous craftsmanship, but adds Eastern-inspired undertones on a mostly classic base, with soy and seaweed appearing alongside Vesterhavs cheese, tartar and veal sweetbreads. You'll find it at Studiestræde 69, just two minutes from Rådhuspladsen in central Copenhagen.
