Uformel is a Copenhagen restaurant with a genuinely interesting origin story. It opened in 2014 in what was then the rougher part of Studiestræde, a space that had previously housed the legendary strip club Wonder Bar, and wasn't the kind of place anyone would expect to find ambitious cooking. It was born as a sister restaurant to the Michelin-starred Formel B, and the team behind it had a clear question on their minds: would guests actually make their way down here? They did. A decade on, Uformel has established itself as one of the respected pillars of Copenhagen's dining scene, making fine dining genuinely accessible without compromising on quality.
